Here’s the rest of this week’s menu (sorry it’s so late):

Thursday
Lunch: Pitas with hummus, snap peas, and chips and salsa
Dinner: Cocktails and snacks at Dr. Jennifer’s (peanut butter and honey sandwiches if we’re still hungry when we get home)

Friday
Lunch: ALTs with snap peas, cottage cheese, and chips and salsa
Dinner: Pitas with hummus, snap peas, and chips and salsa

Saturday
Lunch: Monastic cheese and potato soup with a roll
Dinner: @Peacemeal

Sunday
Lunch: Scrambled eggs with tomato and spinach and a bagel
Dinner: Peanut butter and honey sandwich with cottage cheese and chips and salsa

I need some suggestions for quick, summer-y, vegetarian dishes. Anyone?
