I realize that we’re about half-way through this menu already, but I’m going to post it anyway and hope that you all will forgive my tardiness.
It’s my hope that by making these weekly menus, we’ll be less likely to eat out. This week we had to eat out almost by necessity. Additionally, I’m going to have to start shopping bi-weekly for food (though I’ll still post our weekly menu) due to the distance I have to travel (by bus, with child in tow) to get organic/whole foods.
Here’s what we’re eating (and have eaten!) this week:
Saturday
Breakfast: Cereal
Lunch: ALTs with roasted red pepper hummus, snow peas, and Sun Chips
Dinner:

Breakfast: Cereal
Lunch: ALTs with roasted red pepper hummus, snow peas, and Sun Chips
Dinner: PB sandwiches with black bean salsa and chips
Monday
Breakfast: Cereal
Lunch: Rice and beans burritos with salsa, raw cheddar cheese, and spinach
Dinner: Jimmy John’s! (Subs so fast you’ll freak!)
Tuesday
Breakfast: Egg and cheese breakfast sandwich on a whole wheat bagel (from Einstein Bros.)
Lunch: Rice and beans burritos with salsa, raw cheddar cheese, and spinach and corn on the cob
Dinner: Homemade pizza with green and red bell peppers and spinach and a salad
Wednesday
Breakfast: Oatmeal and fruit
Lunch: Steamed veggies over rice and corn on the cob
Dinner: Spelt pasta with steamed broccoli and spinach and a salad
Thursday
Breakfast: Oatmeal and fruit
Lunch: Steamed veggies over rice
Dinner: Tofu veggie stir-fry over rice
Friday
Breakfast: Oatmeal and fruit
Lunch: Tofu veggie stir-fry over rice
Dinner: Spelt pasta with steamed broccoli and spinach
Saturday
Breakfast: Oatmeal and fruit
Lunch: Scrambled eggs and bagels
Dinner: Leftovers!
