Here’s my attempt at getting back into the menu-planning groove!

Breakfast
Oatmeal with Ground Flaxseed, Raw Honey, Raisins, and Cinnamon and/or Cottage Cheese and Fruit

Lunch/Dinner
Avocado, spinach, and tomato sandwiches (also with cheese) and chips and salsa
Pasta with marinara sauce and steamed broccoli
Pink bean, quinoa, and spinach soup with fresh, homemade bread
Quinoa veggie soup with fresh, homemade bread
Rice and bean burritos
Homemade pizza

Snacks
Green smoothies!

  2. Avocado, spinach, and tomato sandwiches – yum!! Actually, it all sounds really good and really healthy. I don’t think I’ve ever tried pink beans, but it seems like I’ve been hearing about them more often. I’ll have to do some investigating on that one!
