I have high hopes for cooking this week. Despite last week’s detailed menu, Jude and I ended up eating a lot of ALTs and rice and bean burritos. It was holy week, Josh wasn’t around much, and I didn’t have much time to spend in the kitchen. So, here’s what’s cooking this week:

Pasta with marinara sauce and steamed broccoli
Pink bean, quinoa, and spinach soup with fresh, homemade bread
Quinoa veggie soup with fresh, homemade bread
Chilli Bean Soup with Quesadillas
Fajitas and Lime Rice Salad
Avocado, spinach, and tomato sandwiches (also with cheese) and chips and salsa

Snacks
Green smoothies!
