I’m doing little to no cooking this week thanks to the vegetarian food swap I organized in our community. The awesome part of all of this (besides the not having to cook-have I mentioned I don’t have to cook?!?!), is that I get to try some new dishes. Here’s what the Frank Family is indulging in this week:

Breakfast
Cold Cereal and/or Cottage Cheese/Greek Yogurt with Fresh Fruit and Toast

Lunch/Dinner (Compliments of the Food Swap Families!)
Moorish-Style Chickpea and Spinach Stew (thanks to Mary Jo)–I think we’re going to eat this with rice, though I’m not certain.
Spinach and Feta Quiche (thanks to Corrin)–We at this with bagels for lunch today–It was amazing!
Tex-Mex Veggie Chili (thanks to Anita); I’ll be making bread to eat with this later this week.
Quinoa, Corn and Spinach Chowder with Homemade Fresh Bread (chowder recipe from Vegetable Soups from Deborah Madison’s Kitchen) This was my contribution to the food swap. I hope everyone is enjoying it!

Additionally, I’ll be supplementing these dishes with the following simple meals:
ALTs with Chips and Guacamole
Pasta with Homemade Marinara Sauce and Homemade Bread
Egg and Cheese Breakfast Sandwiches with Cottage Cheese and Green Smoothies

Next week, Josh, Jude, and I will be visiting my family and our friends in Scranton, PA, so I probably won’t be posting a menu. I’m really, really looking forward to breakfast at Abe’s, coffee/lunch at Zummo’s, and dinner at the Banshee. I’m also really looking forward to sharing meals with our friends/hosts, the Bader-Sayes. Woo hoo for friends!
