Sunday was an uber-productive day for me. I made fresh basil pesto, hummus, dough, marinara sauce, and eventually, pizza! I hoping to start stocking my freezer a bit, because in less than two weeks, my wonderful hubby will be leaving me for eight days to lead a group of high school and college-aged kids on a mission trip to New Orleans. Boo for being alone for more than a week.

Breakfast
Oatmeal with Flax, Raisins, and Honey
Cottage Cheese, Fresh Fruit, and Toast
Cold Cereal with Cow’s Milk

Lunch/Dinner
Pasta with Fresh Basil Pesto and a Salad
ALT’s with Homemade Hummus and Pitas and a Salad
Rice and Bean Burritos
Eggplant Balls with Homemade Bread and a Salad
Cumin-Roasted Chickpeas with Rice, Avocado, and a Salad
Veggie Burgers with Baked Potatoes and Broiled Asparagus

  1. Hey! Wow-You did do a lot this weekend! Doesn’t it feel good to be ahead of the game, even for a bit? I know you will be missing your DH… that’s hard. There you go with the ALTs! A girl after my own heart. Love them! Everytime I have one, I literally think of you. :-D Eggplant balls sound very interesting… have to check them out, cause eggplant is not my favorite veggie.
