Tomorrow I’m going to take advantage of Josh being home by cooking my little butt off. I planned this week’s menu with next week in mind. Josh will be gone Saturday the 13th through Sunday the 21st, so I’m not going to have much time to cook. Hopefully I’ll be able to stock my freezer with leftovers from this week’s menu.
Breakfast
Oatmeal with Honey and Raisins or Greek Yogurt with Fresh Fruit
Lunch/Dinner
Minestrone Soup
Lasagna with Eggplant Balls
Raw Soup (I’ll be following these tips)
Rice and Bean Burritos
ALTs with Hummus and Chips and Salsa
Homemade Pizza
Veggie Burgers with Baked Potatoes and Steamed Broccoli
Snacks
Apple Cake Squares or Green Smoothies
This week I’m also going to start putting together a muffin tin worth of snacks for Jude to munch on between meals. I did this for a while late last year, but haven’t assembled one for him in a while. I’m not exactly sure what I’m going to fill each compartment with, but I’ll keep a running list and let you all know how it goes over!
