Now that Josh is home from the mission trip to New Orleans that he led, I’m doing my damnedest to get back on the meal-planning wagon. This list is going to be a work-in-progress over the next day or two. I’m looking for filling but light and crisp meals to serve now that the weather has turned HOT. I’m kind of at a loss right now but really wanted to get some kind of menu posted today. Here’s what the (newly reunited!) Frank family is noshing on (so far) this week:

Breakfast
Oatmeal with Honey and Raisins/Cold Cereal with Milk/Greek Yogurt with Fresh Fruit

Lunch/Dinner
Homemade Pizza with Spinach-Packed Marinara Sauce
Rice Salad with Black Beans, Green Onions, Corn, and Avocado
Pasta with Spinach-Packed Marinara Sauce and Broccoli
ALTs (as per usual!)
