    I’ve been thinking about my menu for the current week for days now. I’m feeling like I’m stuck in a rut–eating the same foods week after week. I want to expand our diets but don’t know where to begin. I need suggestions for tried and true vegetarian dishes that are yummy, fairly easy/quick to assemble, and that don’t utilize many fancy or exotic ingredients. Can you help?

    Breakfast
    Oatmeal with Maple Syrup, Cinnamon, and Fresh Fruit

    Lunch/Dinner
    Pasta with Broccoli and Marinara Sauce
    Rice and Bean Burritos
    Quinoa with Sauteed Veggies
    Chickpea Tacos
    Homemade Pizza
    ALTs

    At this point, I know I’m short on meals for the week, but I’m just at a loss for what else to make. Ugh. This meal planning thing is tough.

    Agedashi tofu with tempura-fried veggies, maybe? I don’t know how you feel about tofu, but I didn’t see it on your list and fried is pretty much the only way I can stomach tofu.

    I haven’t tried this particular recipe, but they’d be a fabulous starch for a meal – they taste great!

    This is really basic, but really good. We do the mac n cheese with chick peas from “Deceptively Delicious” and do some sauteed broccoli (onions, garlic, oil) on the side. Yum. And I didn’t even used to like mac n cheese. If you want the recipe, I can email it to ya.
