    There are a few reasons why I haven’t been writing very often as of late:

    1. These days, I’m often times sans laptop. My battery won’t hold a charge, and my power cord died, so unless Josh is home to loan his charger to me, I’m SOL.

    2. I’ve been reading a lot. I recently finished the first two books of the Septimus Heap series and Jane Eyre, and I started the third Septimus Heap book tonight. Once I finish that series, I have the complete works of Jane Austen to get through. I *heart* reading.

    3. I’m tired. By the time Josh gets home and I have access to my laptop, I don’t want to do much other than veg out and watch Gilmore Girls.

    Likewise, there are a few reasons why I haven’t been posting my menu much as of late:

    1. I’m lazy. For the past few weeks (since I hurt my back, really), I’ve been throwing lunches and dinners together kind of piecemeal. I don’t like it, but it’s true.

    2. See numbers 1 and 3 from the previous list.

    3. See number 1 from the current list.

    All that said, I *do* have a menu ready to go for this week. (It helps that Sunday was a Food Swap day!) And since I know you’re all on the edge of your seating wondering what I’m putting in my belly this week, I’ll get right to the point.

    Breakfast
    Oatmeal with ground flaxseeds and frozen fruit
    Coffee. Lots of coffee.

    Lunch/Dinner
    ALTs
    Curried channa
    Veggie chili
    Home made mac & cheese
    Chiles rellenos
    Minestrone soup

    Snacks
    Green smoothies
    Salads
    Fruit

    This week’s menu is almost completely made up of meals we have stored in our freezer. Though I’m doing much better than I was this time last week, I still can’t be on my feet for any real length of time without ending up in a world of pain. In addition to these meals, the “Casserole Calvary” from the church where Josh works is likely to supply us with a meal or two. Last week they brought us stuffed shells and veggie risotto to help us through.

    Breakfast
    Oatmeal with Ground Flax Seed, Honey, Frozen Fruit and Cinnamon

    Corn Coconut Curry Chowder
    West African Peanut Stew
    Not-Tuna Pate Sandwiches (this is a simple recipe from the raw foods cookbook Josh got me for Christmas)
    Homemade Pizza
    Eggs and Bagels
    ALTs

    I’d like to say that green smoothies were on the menu this week, but my brand new blender broke a few days ago, and we have yet to replace it. *sigh*

    Thank God for food swap week. Between having dinner at a friend’s house on Sunday and stocking our fridge and freezer with food from the swap, we’re set for at least the entire week. The only reason pizza is on the menu is because my sweet boy requested it. Here’s what I’m re-heating this week!

    Breakfast
    Oatmeal with Ground Flax Seed, Honey, Frozen Fruit and Cinnamon

    Lunch/Dinner
    Vegetarian Cabbage Rolls from Mary Jo
    Tamales from Anita
    West African Peanut Stew from Sarah and Marc
    Corn Coconut Curry from Corrin
    Butternut Squash Curry Soup from Sarah and Kirk
    Curried Chana (did I get that right, Sarah?)
    Homemade Pizza

    (I contributed chili to this week’s swap but didn’t have enough for my own family. No problem though… we had some last week!)

    Snacks
    Green Smoothies
    Super Yummy Salads (a mix of salad greens, bleu cheese, almond slices, sunflower seeds, dried cranberries, a clove or two of fresh minced garlic, brewer’s yeast, and dressing)

    I swear I’m going to get back on the meal planning (and posting!) menu soon. Here’s my attempt for this week:

    Breakfast
    Oatmeal with Ground Flax Seed, Honey, Frozen Fruit and Cinnamon

    Lunch/Dinner
    Garden Gumbo
    Chili (I use a variation of this recipe.)
    Eggs and Bagels
    Homemade Pizza
    Smoky Brazilian Black Bean Soup (I’ll be trying this recipe for the first time today! Wish me luck!!!)
    Costa Rican Beans and Rice
    Lentil Soup (This is one of Jude’s favorite soups. Lucky for me, I like it too!)

    Snacks
    Green Smoothies
    Salads (My favorite salad contains a mix of salad greens, bleu cheese, almond slices, sunflower seeds, dried cranberries, a clove or two of fresh minced garlic, brewer’s yeast, and dressing. Yum!)
    Assorted veggies

    I made it ten days without gluten. Then I ate a biscuit with a whole wheat bread chaser. I did feel a bit better while I was gluten-free, but I don’t know how much I can attribute it to the change in my diet. The weather has been fantastic in Chicago, and Jude and I have spent a ton of time outdoors. I think the sun and fresh air might have had something to do with my elevated feelings of happiness, health, and goodwill, but I guess I’ll never know for sure.

    Today was food swap day at the Frank household. We had two new families join us this month, bringing the total number of participating families up to six! I had a fantastic time hanging out with all my food swapping friends. So, with little effort on my part, here’s what’s cooking this week!

    Breakfast
    Oatmeal with Ground Flax meal and Frozen Fruit or Raisins
    Green Smoothies and Greek Yogurt

    Lunch/Dinner
    Split Pea Soup and Fresh Bread (my contribution to this month’s swap)
    Quinoa-Stuffed Peppers (from MaryJo and her family)
    Spinach and Feta Quiche (thanks to Corrin and her family)
    Butternut Squash Au Gratin (from Anita and her family)
    Costa Rican Rice and Beans (from Sarah and Kirk)
    Taco Casserole (thanks to Marc and Sarah and their family)

    If need be, I’ll supplement these meals with the following:
    Large Salads made from mixed greens, dried cranberries, almond slices, sunflower seeds, bleu cheese, and dressing
    ALTs with Chips, Salsa, and Guacamole
    Pasta with Homemade Marinara Sauce

    Not only is our shopping day undergoing another shift (hoping to shop on Fridays and cook for the week on Saturdays), but if you pay special attention, you’ll notice(?) that I’m going to be preparing a lot of salads/veggies/beans and eliminating gluten from my (read: the family’s) diet. I’ve been feeling really crummy lately–tired mainly, but just blah as well. So, I’m going to eliminate gluten from my diet to see if it helps me feel better, and from there I’m going to try to eliminate dairy as well (God help me! I LOVE cheese!). A dear friend of mine tweeted at me that if I cut anything else out from my diet, all I would be left with is air. I think she may be right!

    Eggs and Bagels (for Josh and Jude!)
    Oatmeal with Flaxseed, Fruit, and Honey
    Greek Yogurt and Green Smoothies

    My weekly menus have recently shifted from covering a Sunday-Saturday (-ish) time span to covering a Friday-Thursday time span. One of our neighbors has offered us use of her car, and Thursdays seem to work best for her and for Josh’s schedule.
